What better way to kick off the New Year than with that yummy Banana Loaf recipe from the lovely Lynne Robinson (above), the super-inspiring “Queen of Pilates” herself, who dropped in for a chat just before Christmas on the nonstopmama Podcast?

BANANA LOAF
Adapted from a fabulous Gordon Ramsey recipe, to be just a bit healthier.
Softened butter, to grease the loaf tin
100g plain flour
150g wholewheat flour
50g milled seeds (I use a mix of golden linseed, sesame and chia seeds)
1 tsp baking powder
½ tsp baking soda
½ tsp fine sea salt (don’t use crystals)
100 g golden caster sugar
5 tablespoons of Splenda
75ml vegetable oil
2 large free-range eggs
150g natural yoghurt
1 tsp vanilla extract
3 large (or 4 medium) very ripe bananas peeled
50g walnuts, chopped
50g dark chocolate, chopped (I use 80% cocoa, but 70%+ will do).
Preheat oven to 180C/Fan 160C/Gas 4. Butter and line a 2 litre loaf tin.
Mix all dry ingredients, except walnuts and chocolate, together in a bowl.
In another bowl, mash the bananas with a fork, then add and combine the vegetable oils, eggs, yoghurt and vanilla. Mix well.
Fold wet ingredients into the dry ingredients, then quickly fold in the walnuts and chocolate chips. Try to not over mix. Scoop batter into prepared tin.
Bake for about an hour until a skewer comes out clean when inserted into the centre of the loaf. If the bread is not ready, return for another 10mins.
Leave to cool in the tin for 10 minutes before turning out onto a wire rack.
